Gnocchi Pollo Pomodoro Recipe

We’ve all had those moments where we’re hungry enough to eat but aren’t looking for a heavy meal. In times like those, an easy go-to dish is hands down gnocchi. Gnocchi is an Italian dish of small dumplings made from potato, semolina, or flour, usually served with a sauce.

Here at Zeppolis we have several great gnocchi dishes on our menu, with one of our popular ones being the Gnocchi Pollo Pomodoro, which we’ll be sharing the recipe for in this week’s blog. Gnocchi Pollo Pomodoro is a chicken and gnocchi-based dish we make with our home-made gnocchi.

The perfect dish for a light lunch or dinner, we always recommend Gnocchi Pollo Pomodoro to any guest looking to try something new that offers different taste and consistency from a typical pasta dish.

The ingredients for the dish are as follows:

  • Zeppolis housemade Gnocchi

  • 6 oz Sliced Chicken Breast

  • 3 oz Sun-dried Tomatoes

  • ¼ cup spinach

  • Teaspoon Fresh Garlic

  • 3 oz Romano cheese

  • 6oz heavy cream

  • 2 Table spoons butter

Instructions for preparing the dish are:

  • In separate pan, fry Zeppolis Gnocchi in oil until golden brown on each side, about 3 minutes

  • Add butter to pan

  • Sear Chicken on medium-high heat, flip and then add sun-dried tomatoes,  spinach, and garlic

  • cook for 45-seconds to a minute, add heavy cream and bring pan to a boil, add the romano cheese and stir frequently

  • Once the sauce begins to thicken add the gnocchi and simmer for 30 seconds 

  • Plate and enjoy with a California Chardonnay

Whether you’re putting together a last minute meal for one or feeding a few friends or family, you can’t go wrong with our Gnocchi Pollo Pomodoro recipe. Though we greatly recommend making this recipe with our home-made gnocchi (which can be purchased by the pound at the restaurant), you can always make the gnocchi yourself or use store-bought gnocchi as well.
