A Spring Italian Salad Recipe

Looking for a quick and easy Italian salad recipe? We have one for you that’s perfect for spring! With only eight ingredients for the salad and six basic ingredients for the dressing, this salad only takes about 15 minutes to prepare, and makes six side dish portions!  

Ingredients you’ll need for the salad:

  • 1 head of leafy romaine lettuce or 2 romaine hearts, roughly chopped

  • ½ medium red onion, thinly sliced

  • 1/2 cup  of grated, parmesan cheese

  • 1 cup pepperoncini, whole or sliced

  • 1/2 cup of black olives, sliced or whole

  • 1 pint of cherry tomatoes

  • freshly ground pepper, to taste

  • croutons, store bought or homemade

And the only ingredients you’ll need for the dressing are: 

  • 1 tsp of garlic powder

  • 1 tsp of dried oregano

  • 1 tsp of dried basil

  • 1/2 tsp of sea salt

  • 1/2 cup of extra virgin olive oil

  • 2 tbsp of red wine vinegar

In a large salad bowl, combine all salad ingredients: chopped romaine lettuce, red onion, parmesan, pepperoncini, olives, cherry tomatoes, pepper, and croutons. Toss well to combine all the ingredients! Next, in a separate cup or bowl, combine all dressing ingredients: garlic powder, oregano, dried basil, sea salt, olive oil, and wine vinegar. Mix well then pour over salad when you're ready to serve!
